Long time no see..

So what have I been doing lately?
Umm, let's see. Working, being a mom, a wife, avoiding a hurricane and being awesome. :)
Yes, we were among the places hit by Hurricane Sandy, thankfully  by the time it reached us it had lost most it's force and it only lasted a day. Either way we had a lot of damage done and a lot of people without power. However, we are doing well and that is all that matters. :)

While stuck at home due to the weather, I decided to open a Instagram Shop @alittleprincess_shop




I've been wanting to open one for a long time. I have a bunch of things that I buy and than never wear and sooo many of Sophie's clothe that don't fit anymore. I finally decided why not? Right? It has been up since yesterday and it's been great. I've had a great response and I am so excited.

In other news...

This is a picture of my coach, Lee. She did TurboFire and had great results as you can see. Pinsterest Favorites

Here is another Pinterest inspired post:

For those of you that don't know, I am a Pinterest fanatic.. 
I live by it. Anything I need to know, any recipe I want to try, any home remedy - Pinterest is my trusty source. 
 Earlier today I posted about a healthy version of banana muffin I recently made, but than I realized there are a bunch of other things I do on a daily basis that are from Pinterest. I decided to share a few each day because aside from Pinterest, I had never seen them anywhere and would have never thought to do it. 
Since this is a spur of the moment post, some of these pictures aren't mine, I am using the ones from Pinterest, credit to those people in that case. Before I get to them, I just want to thank the people who came up with these great ideas to make my life sooo much easier. hahah

I want to keep my posts somewhat organized so here is my current addiction:
Using cupcake tins to make everything else other than cupcakes. LOL

The first thing I made using cupcake tins were omelets. 
 

Everyone were talking about them and pictures were everywhere so I figured, why not?
They are supperrrr easy to make. You mix all your ingredients as you would a normal omelet  My favorite recipe is simple. Peppers  cheese, and sausage. (Just like a normal omelet  anything that needs to be cooked, would need to be done before you put it in the egg mix.) Than spray your tin with non-stick spray and pop it in the oven at 350 degrees for about 20 minutes. They are delicious, super easy to make and a lot less messy. I have never used cupcake liners with these, but if you do, let me know how it works. :)

It is pretty self explanatory and let me tell you, since this picture, I have never boiled an egg again. Hahaha. They come out great every single time and as always a lot easier. Who doesn't like easy right?

Lastly, and the last thing I did from Pinterest are these amazing mini pancakes. :)



This is a picture from Pinterest, we are pretty boring at my house and did have all these different toppings. I didn't even read the recipe for this one, the picture alone was enough inspiration for to run with.
So here is what I did. 

I used a box of hungry man ready mix. I prepared the amount of 6 pancakes. Sprayed non-stick spray over the cupcake tin and distributed the mix evenly. This made 12 cupcake pancakes exactly. I sprinkled some of the pancakes with mini chocolate chips and chopped walnuts, but that's it. Put it in the over at 350. Since I didn't read the entire recipe, I started checking after 15 minutes. LOL.. They were ready at about 18 minutes. They are great and my daughter LOVED them.

Banana Oats Muffin - 93 Calories

I came across this amazing recipe on Pinterest and just couldn't wait to try it.
All of my favorite things put together to make a delicious healthy muffin I love.
So I tried and unlike many of my Pinterest fiasco, this was a total success.
Aside from it being delicious, it is only 93 calories each.


It took me a few days, but I wanted to share it with everyone! 


Banana Oats Muffin

Ingredients:

*2 /1/2 cup oats (old fashioned kind, not quick cooking)
*1 single serving cup (or 1 cup) of plain low fat greek yogurt
*2 eggs
*3/4 cup sweetener of choice or 2 tbs stevia sweetener
*1 1/2 tsp baking powder
*1/2 tsp baking soda
*2 bananas


Let the Baking Begin!

1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners, (or just use a silicone muffin pan).
2. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth. *Important: I add the oats a cup at a time and then add the liquids. I have to stop the blender and stir a few times throughout as well.
3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean.
SN: I had a few mini chocolate chips in the house, so instead of adding sugar I just added the chocolate chips. I loved it! :)










PS- The original recipe were made with strawberries. If you do try this recipe with another fruit, let me know how it turns out!

Important: The paper liners don't work well when baking with a base that does not include flour, they always seem to stick to the paper. I sprayed the muffin tin with non-stick cooking spray or you can use foil cupcake liners or a silicone muffin pan.
